Cutting back on how many carbohydrates you consume in your diet is a serious step towards enhancing cognitive function and overall performance. My recent flare up with excess carbohydrates, mainly coming from yeast laden foods like kombucha + fermented vegetables + beer, has swung open a whole new door of gut-health awareness. There is such thing as too much of a good thing!
Having too many carbohydrates, or foods that are either directly sugar or converted into alochol/sugar can cause gut dysbiosis as well as lead to excess yeast overgrowth. My case was yeast overgrowth, with a nasty rash/boils coming through the inside of my elbows!! Personal experience shared. Bye bye kombucha, fermented veggies, booch beer for a while.
6 green cabbage leaves
1 broccoli floret cut into tiny pieces, roasted in 1 tablespoon coconut oil + some sea salt
1 cup red cabbage, shredded and dry roasted
3 tablespoons red onion, diced
1 whole avocado, cut into pieces
3 cups kale, flash-steamed in 1/2 inch water topped with sea salt + olive oil
3 red radishes sliced
Cashew pesto cheese for topping
Sprouts for topping
Super Shroom sauce drizzle
Optional add ons: roasted mushrooms, toasted sunflower seeds, dulse flakes, black sesame seeds, roasted (not raw!) tomatoes.
Cashew pesto cheese:
1 cup cashews, crumbled
1/3 cup olive oil
1/2 tsp sea salt
1 Tablespoon lemon juice
1-2 gloves raw garic, punctured and left in open air for 10 minutes
handful of basil
1 tablespoon apple cider vinegar.
Process all ingredients to combine.
Super Shroom sauce: Makes 1/2 cup
1/2 jar of Super Shroom Butter
1 tablespoon liquid aminos
1 tsp apple cider vinegar
1 tablespoon MCT oil
1 inch knob of ginger
Water to desired consistency
Process all ingredient until well combined.
